The Brewery
Pinchgut Brewing Company is a new boutique brewery based in Sydney. Our beer is not brewed under contract by 3rd parties, but by ourselves: a truly hand-crafted boutique product. No corners are cut to meet contract brewing schedules and every small batch is brewed and matured to reach customers in peak condition.
Ingredients are sourced both locally and from Europe to produce beers that are true to their historic Czech origins. The beers use all-malt recipes, and are unpasteurised to maintain the true flavour of the style.
Gerard Meares - Head Brewer
Award-winning brewer, Gerard Meares has been brewing for a variety of small breweries in Australia since 2004. Pinchgut Brewing Company is the result of a very passionate craft brewer biting the bullet and going out on his own.
Gerard recently won Gold and the trophy for champion Porter with the curiously named Dirty Angel and a Silver for Mahogany Porter (both brewed at The Flying Horse in Warnambool) while his Paddy’s (Sydney) Porter collected Bronze.

Gerard recently spent time at the Pilsner Urquell brewery in Plzen, Czech Republic. Perfecting his brewing knowledge (and organoleptic appreciation) of the Pilzner style of beer.
We are confident that Pinchgut’s newest beers – original style PILZNER and BLK PLZ - will add to Gerard’s raft of awards in no time at all.
